What better way to spend a birthday than among friends and authentic Italian cuisine? You’d have to try pretty hard to match that. Thanks to a last minute cancellation, I was fortunate enough to fill one sought after spot in a cooking class put on by the Tuscan chefs from Spannocchia. And what is Spannocchia, you might ask. Why it’s an 1,100-acre organic farm and education center tucked in the hills of central Tuscany. Loredana and Daniela are the chefs and cooking teachers that reside at Spannocchia. They were kind enough to venture over here for a cooking tour that started in Brooklyn, NY and ended in the Waterville, ME area. I met up with them along the way in York, ME at the Stonewall Kitchen Cooking School. And I got to bring a friend who is also a lover of all things Italian — Apes and wine, mainly — Paul Turina.
And so cook we sure did — almost straight from 9AM to 3PM — stopping only to enjoy the fruits of our labor. The menu went as follows: pear and pecorino (sheep’s milk cheese) melt, chicken scaloppine, sesame encrusted potatoes and biscottis. And what a kitchen they have there at the Stonewall Kitchen. Video screens big as double beds in the ceilings and all. It was truly a great spontaneous birthday treat and I thank the chefs for their shared culinary wisdom. Truly priceless!
